While I am not a low carb-er in general, I generally try to avoid grains/high carb veggies as part of my dinner. I tend to have my work day and my exercise done by the time I eat dinner, so I’m not in need of all of the energy carbs provide at that point in the day. My go to dinner is a lean protein with a side of vegetables (or two if I’m feeling zesty!) Which obviously leads to me eating quite a few vegetables and in turn, getting burned out on the same green beans and roasted broccoli. Ugh.
I have been wanting a vegetable spiralizer for awhile now, but I just couldn’t pull the trigger on yet ANOTHER kitchen gadget. I have quite a few in my life already, and not that they don’t all serve a purpose, I just have issue with piling up more things. Well, summer hit and my husband planted SIX zucchini plants. SIX y’all! I took this as a clear signal that I was supposed to own a spiralizer. (Am I right?!)
So, I snagged this puppy from eBay and it was at my house in just a few days. I was so excited I literally ripped it open and started zooming through a zucchini RIGHT AWAY…even though it was 10 am and I had no intention of eating said zucchini until later. Anyway…it was everything my little heart desired.
I know I’m a bit behind the craze on this one, but I like to make an educated decision so I took my time (that’s what I’m telling myself even though this purchase was about as impulse as it gets). I got the one that sticks to the counter because it uses almost ALL of the vegetable. I read reviews that the handheld types can leave a bit of the veggie wasted, so I wasn’t sure about all that. I love this little thing and I can’t wait to see what new veggies it introduces me to. I already have PARSNIPS waiting in my fridge, who am I??!!
Definitely a recommended gadget for making your veggies more interesting. I’ve really only used it for zucchini thus far, but it was great in a raw veggie salad as well as cooked quickly and used in place of pasta. Really, I was questioning how that would be, but I actually liked it!
