I saw a version of this recipe the other day and even though I already have my go to Greek Yogurt Cookie Dough, I was so intrigued that I had to try it out. I was, as usual, surprised by how the flavors came together! This recipe is gluten free and can be vegan if you use vegan chocolate chips. It is also packed with fiber and protein, which umm…is your cookie dough? There is some added sugar, but c’mon…we are doing our best!
Here’s the method and the recipe I created. Give it a shot!
Chickpea Cookie Dough
- 1 cup chickpeas, skins removed (Video on how to remove skins here, you’ll need 1 1/2 tsp baking soda if you use this method)
- 1/3 cup peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 tablespoons agave
- 1/3 cup chocolate chips
1) Combine chickpeas, peanut butter, extracts and agave in a blender or bowl and use immersion blender. Blend into a smooth puree.
2) Mix in chocolate chips.
