Happy Cinco de Mayo! Celebrated by Mexicans and Mexican Americans, it is a day of pride and remembrance of an unlikely victory of the Mexican army over the French at the Battle of Puebla on May 5, 1862. There. Now, if you have spent your whole life not really knowing exactly what Cinco de Mayo is, I have saved you from a tad of ignorance.
On the other hand, for Americans without Mexican heritage, it is largely a day to chow on tacos and drink ourselves silly on margaritas. While I don’t necessarily discourage EITHER of those pastimes, I would like to offer some um, shall we say “less regrettable” options for enjoying yourselves.
This weekend is looking to have awesome weather where I am, so I’m putting together a little kick off to spring a la Cinco de Mayo pot luck. Here are some recipes I will be making:
Total confession. I’ve never purchased a REAL mango (unless mango Rita’s Italian Ice counts, there’s real fruit in there…right?) in my entire life. I identify myself as a foodie and this is a true embarrassment. Time to change that, and this recipe looks like it would make it well worth the preparation. Anyone use that trick with the glass to peel the mango? Does it really work?
I have a few crazy cats in my family that are vegetarians, so I always have a veggie dish when I make a spread. Besides, veggies are good and even better with CHEESE. Yum.
I’ve made these puppies for dinner and they are always a hit. With homemade enchilada sauce, you can avoid all the crazy preservatives in the store bought version. Worth it just for that!
This will really change your life. I’d bet on that. I make this version of guacamole all the time and people are always blown away to know there are beans in it. It saves you calories and cash (dang expensive avocados!) and tastes amazing. I modify this recipe by pureeing my beans first with an immersion blender or food processor. I leave the avocado on the chunky side, but I prefer not to bite into a chunk of bean. Mind games, you know?
Sooooo…I said I was sharing my healthy Cinco de Mayo recipes. But it would be rude of me to hoard this non-healthy recipe to myself.
